Afternoon tea is just not complete without scones. Can you believe they sell these for $3.50 at the PNE? And that I buy them in a pinch? Oi.
Ingredients (makes about 12):
2 cups flour
0.25 cup sugar
2 tsp baking powder
0.25 tsp salt
1/3 cup cold unsalted butter, pieces
1 large egg, lightly beaten
1 tsp vanilla
0.5 cup cream or milk
Method:
Preheat oven to 375F, middle rack.
Line a cookie sheet with parchment paper.
In a large bowl, whisk together dry ingredients.
Rub/cut butter into mixture until it is coarse crumbs.
In another bowl, combine wet ingredients.
Add wet to dry and stir until just combined.
Knead gently on a lightly floured surface until smooth.
Pat or roll into a sheet about 2 cm thick.
Cut into 5cm diameter rounds.
Space rounds about 5cm apart on the sheet. Brush tops with some cream to help brown.
Bake for 15-18 minutes, until brown and toothpick inserted into the middle comes out clean.
Serve with Devon cream or creme fraiche and jam.
