Hot Mango Sandwiches

Frozen mango was on sale a while back, and we bought a bag with the intention of making mango pancakes. Since then, we got a sandwich maker, and the package of mango is still unopened. Let's see if mango sandwiches are any good.



Ingredients:
Sliced bread
frozen mango pieces, slightly thawed
Butter





Method:
Make the sandwiches as per your maker's instructions.

Verdict:
It needed more sugar, but otherwise worked as a snack

Pasta: Chicken and Spinach in Rose Sauce

It's nice to plan for some variety during the week, so last night, we bought a rotisserie chicken from Save-On with the intent of trying to polish off the mashed potatoes from the shepherd's pie. It didn't happen, as I think there was a good 6lbs of potatoes left. (oi.)

Anyways, we also picked up Olivieri Picante Rose sauce and a bunch of spinach, knowing that we would have leftover chicken. I don't like eating roast chicken on its own the next day, so into the sauce it goes, along with chopped spinach to add oomph.


Yay for lunch tomorrow!

Oh, and Will protests the "lazy food" tag. However, seeing how he did all the food prep, it was lazy for me =PP

Baked Salted Chicken

Chicken legs were on sale at Save-On, something like $1.30/lb, so we bought a tray of 5. It was originally intended for the Chinese-style baked chicken with crispy skin, but I was too lazy to go out and get the 5-spice mix. Instead, I rubbed it liberally with seasoning salt (the can being from goodness knows when), put a bit of water in the baking pan to keep the meat moist, and threw it into a preheated oven @ 375F for 1hr15min.

Badabing, dinner was ready with some rice.

The skin was crispy, so I am happy with that. The only thing was all that liquid that came with the chicken when I took it off the pan. If I had a rack, like a smaller version of the ones on a barbeque grill, I would've used it to allow the drippings to separate from the chicken.

Fish Sticks with Corn Sauce

There are always days when we just won't feel like cooking or trekking out to a restaurant, so what do we do? As Will would call it: Man Cooking--Fire and Forget.

We had some fish sticks in the freezer, so we threw that into the oven; put some rice in the cooker; warmed up a can of cream-style corn thinned with a bit of water and voila! Dinner that takes 5 minutes to prep and is ready in 30 minutes. We had some veggies already, or we probably would've used some frozen stuff.
